White Fruit Cake
Ingredients
• 2 cups (250g) all-purpose flour
• 1 cup (225g) unsalted butter, softened
• ¾ cup (150g) sugar
• 4 large eggs (room temperature)
• 1 tsp vanilla extract
• 1 tsp baking powder
• ¼ cup (60ml) milk
• 1½ cups (200g) mixed dried fruits (chopped raisins, cherries, pineapple, etc.)
• 2 tbsp flour (for coating fruits)
Instructions
Cream the butter and sugar together until light and fluffy.
Add eggs one at a time, beating well after each addition.
Stir in vanilla extract.
In a separate bowl, mix flour and baking powder.
Gradually add the dry ingredients to the creamed mixture, alternating with milk, and mix until smooth.
Toss the dried fruits with 2 tablespoons of flour to prevent sinking, then fold them gently into the batter.
Pour the batter into a greased and lined loaf pan.
Bake in a preheated oven at 170°C (340°F) for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
Allow to cool completely before slicing.
